French Tarragon has an unfair reputation as a problem - difficult to grow and quick to die. You just need to remember its more tender than most and hates overwintering in wet soil. Plant in full sun, in a herb bed or large pot with fertile, light, free-draining soil and you’ll be fine. It’ll grow vigorously when happy and should return again and again as long as it’s tucked up over winter or bought indoors (in pots). Tarragon will be really happy growing in our pot on a sunny windowsill until it needs potting on.

Once you discover winter savory in the kitchen, you’ll be chucking it in everything! It’s highly aromatic and similar to rosemary and hyssop in appearance. It has a peppery, thyme like flavour and suits cooking in stews, casseroles and sauces. Winter savory is a hardy, evergreen perennial and once established is pretty bullet proof. Suited to pots on a sunny patio or windowsill, it will delight with pretty, nectar rich flowers in summer. Winter savory will be happy growing in our pot on a sunny windowsill until it needs potting on.

There are lots of thyme varieties, but this is the original and the best. The nearest thing to wild thyme, dried bunches of which you’ll see hanging in markets from Provence to Tuscany. As you can imagine, it likes a warm, bright location. South facing is best, planting in full sun brings out the essential oils in the leaves, concentrating the flavour. All thyme enjoys light, well-drained soil and hates waterlogging, especially in winter. Common Thyme will be really happy growing in our pot on a sunny windowsill until it needs potting on.

Coriander is the go-to herb for use in curries and south Asian cuisine. The leaves have a fresh, citrussy, lemony flavour and the seeds a warming, nutty, zesty taste. It’s quite literally a ‘marmite’ herb as up to 20% of people find the flavour of coriander has an abhorrent rotten, soapy taste. This is actually due to a variation in a certain gene, the incident of which differs with ethnicity.

If there were a Champion’s League of Herbs – oregano would be in it every year, one of the old Italian giants…Napoli maybe? It’s a wonderful culinary herb and is really easy to grow if you treat it well. Oregano loves being in the sun, where the rays will concentrate the essential oils, scent and flavour of the leaves. It prefers light, free-draining soil like other herbs from the Med and hates soggy roots, especially in winter. Oregano will be really happy growing in our pot on a sunny windowsill until it needs potting on.

Chives are a kitchen garden staple and if allowed to will seed quite happily about the garden. They’re a member of the allium family, alongside onions, garlic and leeks and have a mild onion flavour too – which is perfect for sauces, dressings, marinades and garnish. Easy to grow, choose a pot or at the front of a border in sunny or partially shaded spot. When harvesting, cut individual leaves down to just above the base – let some flowers grow for the bees and your salads. Chives will be really happy growing in our pot on a sunny windowsill until it needs potting on.

Rosemary is a totally under-rated shrub. The aromatic, evergreen leaves can be enjoyed all year round, bees and pollinators are drawn to the small, light blue flowers, it’s got loads of culinary uses and is full of health benefits. Miss Jessop’s Upright has a taller, less spreading habit than other varieties. She’ll enjoy most conditions in a sunny sheltered spot – pot, container, in the ground, she’s not fussy but likes fertile, well-drained soil. Miss J will be really happy growing in our pot on a sunny windowsill until she needs potting on.

Dill is a wonderfully aromatic plant and is worth a place in any herb garden. The leaves are prized for their sweet anise flavour which has none of the liquorice strength of fennel, and the seeds for their pickling power. Generally grown as an annual because it’s not hardy, it will be ok over winter in a greenhouse and suits growing in deep pots – to accommodate the long root. Grow in a sunny position and keep moist. Dill is pretty vigorous but will be ok in our pot on a sunny windowsill to begin with.

Lemon Balm has been used for thousands of years to ease digestive problems and as a feel-good mood lifter. It’s an undemanding, easy to grow herb thriving virtually anywhere in the garden, in sun or partial shade. Bees love the pretty flowers, but it’s the leaves which pack a lemony, minty punch and have a delightful citrussy aroma. In cooking, it’s an interesting lemon alternative – especially in fruit cocktails, desserts, cakes and marinades. Lemon balm will be really happy growing in our pot on a sunny windowsill until it needs potting on.

Fennel is a brilliant herb and would grace any garden on looks alone. But it has style and substance; tall delicate stems and wispy leaves are topped with vivid yellow umbels of flowers in late summer and its subtle flavour is prized in all manner of culinary dishes. It’s very easy to grow and vigorous too, enjoying fertile, moist, free draining soil. On a patio or balcony, grow in a deep pot to give the tap root plenty of space. Fennel is very vigorous but will be ok in our pot on a sunny windowsill to begin with.

For some reason, Hyssop is a lesser known and grown herb. It was big in antiquity – used as an important culinary and medicinal plant and valued for its spiritual cleansing and protection against evil. A member of the mint family, it has a wonderful, minty floral taste with slightly bitter lavender overtones. Hyssop is a slow growing but super-hardy, semi-evergreen shrub which bees can’t get enough of. It’s comfortable in a range of soils and is an impressive plant when grown in a large pot on a warm, bright patio. Hyssop will be really happy growing in our pot on a sunny windowsill until it needs potting on.

Garden Mint aka Spearmint (it’s rapper name) is a friendly, sweetly scented perennial which is virtually unkillable. In fact, it can be a bit too friendly and in the right conditions can get out of hand, so is best grown in a pot. It’s fast growing, so you can regularly pick refreshing leaves for desserts, sauces, cocktails and baking. The soothing and decongestant qualities of mint are well known, it’s also extensively used in skin care products. Your mint will be really happy growing in our pot on a sunny windowsill until it needs potting on.

If curled leaved parsley is the best for a garnish, then flat is best for cooking. It has a slightly stronger, peppery flavour and is a lot quicker and easier to clean. It’s easy to grow but does enjoy rich, moist soil in a sunny position. Great indoors on a windowsill, in a conservatory or greenhouse, just make sure it doesn’t dry out. Harvest the leaves regularly and more will follow but you’ll probably need a few plants if you’re a heavy user. Parsley will be really happy growing in our pot on a sunny windowsill until it needs potting on.

There’s nothing common about this gorgeous evergreen shrub, with its pungent downy leaves and stunning purple flowers. A herb garden must-have, sage grows best in full sun, which brings out the flavour of the leaves. It does very well in pots or containers on a sunny patio or balcony and will love being outside in a bed with other Mediterranean varieties. It’s hardy and drought tolerant once established and needs a bit of space to reach its full potential. Sage will be really happy growing in our pot on a sunny windowsill until it needs potting on.

Garlic chives are an allium like chives, but a different species altogether; allium tuberosum. They originated in China and spread throughout Asia before the rest of the world. Larger and more vigorous than chives, with flatter, broader leaves and a distinct garlicky taste. Garlic chives are easy to grow and actually considered invasive pests in some countries. They enjoy the same conditions as regular chives, including being particularly suited to pots.

Foxglove (Digitalis purpurea) is a native wildflower herb with a rich and ground breaking medicinal history. It’s a cottage garden staple with hundreds of varieties in different colours - all bred from this original woodland dwelling plant. All parts of the plant are highly toxic to humans and animals so beware if you’ve nibbly cats and dogs or inquisitive young children. Foxgloves are one of Britain’s most recognisable wildflowers, instantly spotted by its tall spires of dangling, thimble-shaped blooms. Also known as fairy gloves, witches’ bells, dead man’s bells, or folk’s glove, they are especially adored by bumble bees. In the 18th century, English physician William Withering revolutionised cardiac medicine by identifying compounds in foxgloves which are used to this day to treat heart conditions.

If you’re looking for an easy to grow, pretty, native wildflower which will attract bees, butterflies and moths then look no further than Red Campion Red (Silene dioica). Also known as called Red Catchfly, Adder’s Flower, or Robin Hood, with vivid cerise flowers and soft hairy leaves which have been gracing verges, hedgerows, woodlands and country lanes for centuries. Its soapy sap was traditionally used as a natural hand cleanser and hair wash. In folklore it was thought to ward off snakes – especially Adders. Not a culinary superstar, Red Campion is edible and does however have some uses. The young leaves have a mild, earthy taste a bit like spinach and can be treated in a similar way. The delightful flowers make a great decoration or addition to foraged salads, cakes and biscuits and cocktails. You should grow Red Campion for its appeal to bees, butterflies and moths. A favourite of the astonishing Hummingbird Hawk-month whose extra-long tongue can penetrate the deep flower head where others can’t, it’s also a great food source for bumble bees and various butterfly species.

Cowslip (Primula veris), also known as Herb Peter, Key Flower, or Mayflower, is one of Britain’s most beloved springtime wildflowers. With its nodding clusters of golden, bell-shaped blooms and gentle honeyed scent, cowslip has long been cherished in folklore, medicine, cooking, and gardening. Once very wide spread, you know may only see small clusters of these cheerful harbingers of spring in fields, along roadsides and on grass verges and banks. A UK native with a rich history and folklore it was thought to ward off evil spirits and reveal hidden fairy treasure! In traditional medicine it was used as an expectorant to sooth coughs and colds, as a mild sedative and to ease rheumatism and joint pain. Cowslip has a mildly sweet, floral, honey-like flavour with subtle green and herbal notes. Both flowers and young leaves have culinary potential, particularly in desserts and syrups.

Teasel (Dipascus fullonum) is unique amongst wildflower herbs in that it’s arguably more useful dead than alive! In autumn and winter, the unmistakable sight of spires of dried teasel stems and spikey heads are commonly found along hedgerows, roadsides, waste ground, and in woodland margins. They provide valuable bird food – especially for Goldfinches, and flocks of these beautiful birds can often be seen teasing out the fine seed from the spiney heads. The dried stems also make excellent, natural decorations for flower arrangements and Christmas wreaths. Back in the day, teasels were in great demand in the textile industry where the dried seed heads, with their stiff hooked bracts, were used to “tease” or raise the nap on woollen cloth—hence the name teasel. This easy to grow biennial should be part of any wildflower area or garden, they’ll thrive in most conditions and when alive and in flower, will attract a host of bee’s and butterflies.

Herb Robert is a type of native wild geranium with pretty pink flowers, which thrives almost anywhere. It’s an important wildflower herb for bees and pollinators and has a rich history of medicinal use and spiritualism. Also known as Stinking Bob, this cheerful little fella has a dark side which is that it has a rather pungent, off-putting, musty smell when crushed. Bluntly – think fox wee! Don’t let that put you off though. It’s delicate pink flowers and ability to grow in most soils and aspects make it an attractive choice for areas of the garden where other plants struggle. Thought to be named after a medieval monk - St Robert of Molesme, who popularised its use medicinally, using it to stop bleeding, healing wounds, and treating infections. Once thought to cure snake bites due to the speckled stems and seeds resembling a viper’s skin or head, it’s not a culinary plant and is now rarely used in medicinal remedies.

Toadflax is a delightful, cheerful wildflower herb which spreads freely and can get a bit out of hand. It’s hard to complain at its profligacy because Toadflax flowers are a designed for bees and look simply gorgeous. Often called ‘wild snapdragons’ due to their resemblance to Antirrhinums, they’re actually second cousins or something and are certainly more useful! Historically, Toadflax was used as a natural dye for producing yellow hues. It was considered a “herb of the people,” appreciated for its medicinal properties and its association with purity and resilience.

Milk thistle, known scientifically as Silybum marianum, is a spiky yet beautiful herb with the best latin name of any plant, in our opinion! It’s one of those wildflowers which maybe considered a weed – it’s very vigorous and will spread quickly. However, if you’ve room in your garden it’s a wonderful, architectural plant, loved by bees and butterflies and of course is renowned as a natural remedy for liver conditions. It’s a great plant for a cat safe or dog friendly garden and is actually used in some pet supplements to boost liver functions. The spikey leaves generally discourage nibbling anyway.

If you want to bring all the bees to the yard then growing Viper’s Bugloss is a must. It’s a striking native wildflower herb with electric-blue flowers and bristly stems, also known as blueweed or blue devil and is famous for its bee appeal. Like most native wildflowers, Viper’s Bugloss is incredibly easy to grow - is suitable for most soil types and enjoys full sun. It just likes to be left alone to get on with its main purpose which seems to be to attract as many bees and pollinators as possible! Once thought to cure snake bites due to the speckled stems and seeds resembling a viper’s skin or head, it’s not a culinary plant and is now rarely used in medicinal remedies.

Lady’s Bedstraw (Galium verum), also known as Yellow Bedstraw or Maid’s Hair, is a charming, honey-scented wildflower loved by bees, revered by herbalists, and cherished by gardeners. A UK and European native, it was prized as a stuffing for beds (hence the name) due to its sweet scent and insect repelling properties. It was said to be used by the Virgin Mary as bedding straw in baby Jesus’s manger. Easy to grow and used to our unpredictable climate, Lady’s Bedstraw’s golden yellow flowers are a magnet for bees and butterflies and was a popular symbol of love, happiness and fertility. Practical too – the roots were used to create a natural red dye and in cheesemaking as a natural rennet.

Jacob’s Ladder (Polemonium caeruleum) is a hardy UK perennial with blue flowers, loved by bees. Learn how to grow it and buy young plants online here. Sometimes known as Greek Valerian, Charity, or Abscess Root, Jacob’s Ladder is a charming, cottage-garden perennial that combines soft beauty with a rich history of folklore, medicine and symbolism. Best loved for its elegant, ladder-like foliage and clouds of blue or violet flowers, this plant is as useful to pollinators as loved by bees. Woad (Isatis tinctoria) is a historic blue dye plant for UK gardens. Learn how to grow it, its uses, and buy young woad plants online. Often known as Dyer’s Woad or Blue Woad, it’s famous for producing a rich blue dye long before indigo reached Europe. Woad is a striking, architectural plant that also boasts a long history of medicinal use, folklore, and cultural symbolism. Often thought to have been used by the ancient Picts (and Mel Gibson) for tattooing their bodies with intricate blue designs, there is now some conjecture about this. Never-the-less, there’s no doubting it’s importance in the early textile industry when vast fields were sown with Woad and laws that laws were passed to protect its trade.

Despite the unfortunate name, this is actually a pretty native wildflower and is a medicinal herb garden superstar. It’s local, so will be happy in most conditions and soil types, although it does do better in a fertile, moist spot. St John’s Wort has long been used as a mood enhancer and is known as a herbal antidepressant. It needs a bit of space and develops into a small, hardy perennial shrub. Suitable for large pots or unfancied parts of your garden, in partial shade. St John’s wort will be happy growing in our pot on a sunny windowsill until it needs potting on.

Valerian is a pretty, native wildflower which attracts an abundance of friendlies to your garden, including cats (friendly or not) and has a rich medicinal history. It has many common names including ‘all-heal’ and ‘phu’ (pooh) which is appropriate as the dried root smells of sweaty socks! Cats love its ripe scent; it stimulates them in a similar way to catnip. It loves a rich, moist position and will grow in most aspects and soil types. The Curry Plant, botanically known as Helichrysum italicum, is a small, silvery evergreen shrub famous for its warm, curry-like aroma. Also called Immortelle, Everlasting, or Italian Strawflower, it smells unmistakably like curry powder. However, not to be confused with curry leaves, a staple of Indian cuisine which are from a Curry Tree (Bergera koenigii). This Mediterranean native is still valued for its culinary flair – adding a pleasingly mild curry flavour and aroma to dishes. Curry plants are a worth their place in your herb garden for their looks alone – unusual silvery foliage is studded with small, golden yellow flowers in summer. A beautiful and aromatic woody perennial which will delight the senses (and bees and butterflies!).

If you’re a big thyme lover, you’ll want to add Thyme Foxley (Thymus pulegioides ‘Foxley’) to your collection. It’s a low growing variety with delightfully colourful, variated leaves ranging from creamy yellow to soft peach. A broad leaved, spreading thyme, Foxley is a great choice for pots, hanging baskets and rockeries. It’ll spread gently and flower with small spikes of vivid purple flowers which are adored by bees and butterflies. Like all thyme, it has a lovely fragrance and is of course, wonderful in the kitchen flavouring all manner of sweet and savoury dishes, drinks, teas and cocktails. The beauty of this cheerful little chap is that in the summer the leaves are flecked with creamy hues and in the winter, they change to more peachy, coopery shades. So, style as well as substance! Thyme Foxley, like the rest of the family, is very hardy and used to coping with our unpredictable winters. It doesn’t like being waterlogged and is pretty drought resistant once established.

Rosemary Barbeque has been specifically bred for its culinary benefits. Its as vigorous as rosemary goes and has squat bushy habit producing thick stems which are a delight smoking on the BBQ. All rosemary prefers a sunny position in fertile well-drained soil and hates sitting in the wet – this one’s no exception. Grow in a large pot on a sunny patio or make it the centre of attention in your Mediterranean herb bed. Rosemary will be happy growing in our pot on a sunny windowsill until it needs potting on.

You can’t have enough thyme in our opinion, especially if you love to use it in cooking or want to provide valuable nectar for bees and butterflies. Thyme Archers Gold (Thymus pulegioides ‘Archers Gold’) is a really special variety that’s a bit different from other cultivars. It has the most beautiful golden foliage which positively glows when the sun shines on it. Archers Gold is a low growing broad leaf thyme which has a milder taste than common thyme with a slight minty, lemon tang and gentle peppery finish. A brilliant culinary variety, it’s ideally suited to desserts, cakes and sweet dishes which don’t require a robust thyme flavour. Lovely in a cocktail or as a garnish, the golden yellow leaves offer something a bit different. In the garden, it’s a mound forming, spreading, evergreen (or evergold!) perennial which is happy at the front of borders, alongside path edges, in rockeries or pots. The vibrant foliage offers something different and gives year-round interest.

Chicory with its latin name of Cichorium intybus might sound like a spell from Harry Potter (for making a weird coffee-like drink maybe) but it’s a herb with multiple uses and a rich history. People tend to think of Chicory as a war time coffee substitute or for using its peppery leaves to liven up a salad, but it’s actually a wonderful garden plant with beautiful blue flowers and a vigorous climbing habit. Chicory is a sprawling perennial which can reach 1.5m tall, with some support. It’s hardy down to -10 degrees so is perfectly happy in most conditions. You can eat the leaves, enjoy the flowers (along with bees and butterflies) and at the end of the season, use the root for loads of things.

Where have all the butterflies gone? The sight of buddleia bushes pulsating with masses of vibrant species seems like a childhood memory. Unfortunately, it's not nostalgic rose-tintedness, there's been an 80% reduction in UK butterflies since the 1970's. Hopefully times are changing, with fewer pesticides used and rewilding being encouraged. These herbs will do their bit.

Popularised by the famously multi-estranged folk duo Simon & Garfunkel, Scarborough Fair is a traditional northern English ballad about the impossible tasks a girl will to do to claim her true love. However, the inspiration from this collection came from the fabulous ‘Scarborough’ sausages of butchers Burton & Son in Saffron Walden. Original lyrics used ‘savory’ instead of ‘parsley’ – which is handy.

This mob of herbal heavy lifters will have your back all year round. They're all evergreen, shrubby or woody types and once mature will be as tough as they come, giving essential culinary herbs through the autumn and winter. Slower growing than most, they'll happily sit on a sunny windowsill for a while (especially over winter) but will only reach their impressive potential outside in pots, a herb garden or border.
