    Not Just Culinary Herbs - Read About Their Wellbeing Uses

    Chamomile – More than a relaxing bedtime drink

    Chamaemelum nobile (Roman chamomile) is not to be confused with the lawn variety and is grown for its medicinal properties. Everyone knows chamomile as a soothing bedtime tea to help you sleep and that is its superpower, but it has other health boosting benefits too. It’s a ‘nervine’ herb, thought to benefit the central nervous system and has excellent anti-allergenic and antioxidant properties.

    Dill – A magic plant that will protect and soothe.

    Dill is a herb long respected for its calming and relaxing properties, its name literally means to lull or soothe. Dill plants also contain flavonoids packed with heart boosting antioxidant and anti-inflammatory compounds which may help reduce blood pressure and cholesterol. In the Middle ages, dill (aka the ‘magician’s herb’) was employed as a protection against witchcraft and the devil.

    Fennel – The Roman cure-all which might help weight-loss

    Fennel plants contain many beneficial nutrients, vitamins and minerals. It’s been used in medicine since Roman times, Pliny the Elder was particularly enamoured. Particularly good for cardiovascular health, Fennel is very high in magnesium, potassium and nitrite. Fennel also contains various compounds believed to supress appetite and help stimulate the metabolism, whilst high levels of selenium and vitamin C helps boost immunity.

    what’s included
    French Tarragon Herb royalty when it comes to sauces, Tarragon is the star of a sauce bearnaise which is the perfect accompaniment to steak and pork. It works well with citrus flavours too, paring with lemon balm.
    Chives Chives are a sauce staple and work with most of the mums and daughters, from a chive beurre blanc to garlicky aioli and rich tomato Provençal sauce. Best used fresh, snipped straight from the plant.
    Dill Dill’s delicate anise flavour is often paired with fish and seafood. It’s popular in white sauces based on bechamel or hollandaise and is a key ingredient in a homemade tartare sauce.
    Lemon Balm With its zesty, slightly minty taste lemon balm works well alongside lemon juice (or instead of) in sauces. It works particularly well in a chicken velouté and gives a classic hollandaise a twist.
    Flat Leaved Parsley The most French and saucy of herbs, parsley is used across all of the classics. Tough stalks help form a bouquet garni for tomate and espagnole sauces. Parsley sauce is traditional with fish and ham.
    Common Thyme Thyme takes long cooking releasing its flavour over time (no pun intended). The sprigs are used whole in a bouquet garni, tied together with other herbs to be fished out at the end of cooking.
